Garam Assam


Garam Assam ( Shrimps or Fish In Sour Sauce)


1 l/2 lbs. Fish or Large shrimps
3 tbsp. Tamarind ( assam ), add 1 cup water, strain & use liquid only
3 tbsp. Brown Sugar
2 tbsp. Sea Salt
8 tbsp. Cooking oil
Ingredients (to be pounded or use blender together):
12 slices Lengkuas (a root similar to ginger), powder packet is available from Asian stores
1 whole Turmeric, thumb size piece
6 whole Candlenuts, or you can use hazelnuts
1 tbsp. Shrimp paste
6 whole Red Chilies
2 stalks Lemon grass ( bruised )
20 whole Shallots


Over high heat in a large sauce pan sauté the pounded ingredients in cooking oil for 2 minutes

Add in a little tamarind juice and stir fry for another minute.

Over high heat, add in the remaining tamarind juice, sugar and salt.

Bring to boil and add meat and simmer uncovered for 10 minutes.

Serve with steamed white rice.

Serve 4-6 people.
