Lean Beef

 

Sinigang na Baka (Lean Beef Cubes in Sour Broth) with Vegetables

Ingredients:

2 lbs. Lean beef cut in 2 inches cubes- ( you can substitute, lean pork-cut the same way)
or 1 1/2 lbs. (Whole fish well clean slice into 1 inch piece)
or 1 lb. (Tiger prawns/shrimps wash well with out removing the shell)
2 medium Tomatoes cut into 1/4 portions
2 medium Onions cut into 1/4 portions
1 packet Tamarind Sour powder, pour 1/4 of the packet (available in Asian groceries)
Variety of vegetables you need:
Hot chilies, cabbage, Chinese bakchoy, eggplant, banana blossom, string beans, taro root, okra and white radish
Just wash the chilies, apart from okra just trim both sides, taro root need to peel the skin and cut in halves and wash well all the vegetables.

Procedure: (To prepare Beef or Pork):

Wash well and boiled the meat and cook until it's tender and at the same pot put the onions, tomatoes and chilies, cook them for 10 minutes.

Covered, mix the tamarind packet straight on the cooking, stir once or twice and add all the remaining vegetables ingredients.

Cook and simmer for15 minutes then give a good stir so the flavor will mix evenly and turn to low heat for another 5 minutes.

The food is cook and ready to serve in individual bowl and eat with steamed plain rice.

Serve 8-10 people

Simple tips:

To prepare Fish or Shrimps - they go on the last part of cooking to save them being overcooked.
