Fajitas

 

Beef or Chicken Fajitas

Ingredients:
2 1/2 lbs. Skirt or Round Steak
or 2 lbs. Chicken breast, skinned off
2 medium Green peppers, seeded and cut into rings
1 medium Red pepper, seeded and cut into rings
2 medium Red onions, peeled and cut into rings
Fajita Marinade:
1/2 cup Peanut oil
1/2 cup Soy sauce
1/2 Fresh lime juice
1/4 cup Red wine vinegar
2 1/2 tbsp. Fresh garlic chopped
2 tbsp. Paprika powder
2 tbsp. Chili powder
2 tbsp. Cumin powder
1 tbsp. Brown sugar
1 tsp. Oregano, dried
Condiments you need:
1 packet medium Flour tortillas
2 big Tomatoes, roughly diced
1/4 head Lettuce, chopped
1/2 cup Mexican cheese, grated
1/2 cup Sour cream
1/2 cup Guacamole (avocado dip)
and medium Salsa dip (available ready made in food stores)
1 medium Canned refried beans
2 cups Mexican or Spanish rice (follow cooking instructions on the packet)

Procedure:

Mix all ingredients in large bowl and pour over skirt steaks or chicken breast meat the onions, green peppers and red pepper.

Then leave to marinate up to 4 hours or longer covered in refrigerator.

Grill steak and the vegetables over high heat until meat is cook enough or on desired temperature and the vegetables are lightly blackened.

Remove from the grill and slice into 1/4 inch strips.

Serve in warm flour tortillas, diced tomatoes, chopped lettuce, grated cheese, sour cream and any other of your favorite Mexican condiments.

Serve with refried beans and Mexican or Spanish rice

Serve 6-8 people.


Simple tips:

This is a very delicious and mouth watering dish, but if you need to do quick style, get a ready made packet of Beef Fajita seasoning and followed the instructions. for sauce.

A lot of people wants to eat a proper meal, but sometimes not everyone  can get enough time to prepare a long processing meal.
