Bake Fish

 

Bake Fish Italian Style

Ingredients:

6 pieces  White fish fillets
2 medium Onions, chopped finely
3 cloves Fresh Garlic, crushed
1 1/2 lbs. Fresh plum tomatoes
or 18 oz. Canned Italian tomatoes
3 tsp. Fresh basil leaves, chopped (dried can be alter if fresh is not available)
5 oz. White mushrooms, sliced finely
3 tsp. Capers, chopped
15 pieces  Black olives
1 whole Lemon juice
4 tbsp. Virgin olive oil
some dash Sea salt
some dash Freshly ground black pepper

Procedure:

Preheat the oven to 375 F temperature.

To start with make a good thick tomato sauce.

In medium heat, put a frying pan with olive oil, put the garlic and onions and fry for 5 minutes.

Add the tomatoes and season with salt and pepper, uncovered, bring to simmer and cook gently for 15 minutes strring occasionally.

Add and mixed well the mushroom, simmer for 10-15 minutes, until it produce a thick sauce.

Followed to stir are basil and capers.

Then place the fish layered in baking dish and season with salt, pepper, sprinkled with little lemon juices on each fish fillet.

Next is to spoon an equal quantity of the sauce into each fillet and arrange few olives on the top.

Covered the dish with foil wrap, bake in high shelf of the oven for about 25 minutes.

Or if the fish is thick than average size, add another 10 minutes in baking.

Good accompaniments serving this dish either, brown rice, steamed new potatoes or tossed green salad.

Serve 6 people.


Useful variation:

Halibut and Haddock fillets are the best of the white flesh fish I will recommend to use cooking this dish, the taste are really awesome.

You can serve any light pasta to go with with at least steamed vegetables variety.
