Corned Beef


Traditional Irish Corned Beef & Cabbage In Horseradish Sauce


5 lbs. Corned beef
1 large Onion, peeled
6 whole Cloves
4 sprigs Fresh parsley
10-12 whole Peppercorns
3 lbs. Fresh Cabbage, cut into wedges and cored
11/2 cup Sour cream
2 tbsp. Prepared Horseradish

Stick the whole gloves in a peeled onion.

In a large casserole pot , put the corned beef, onion, parsley and peppercorn with 4 cups of water.

Cover the pot, bring to a simmer and cook gently until the corned beef is tender for 3 1/2 hours.

Add the cut and cored cabbage in the pot, cover, simmer until tender for at least 30 minutes.

Combined horseradish and sour cream.

Serve the corned beef and cabbage and ladle some broth over the meat and put the horseradish mixture on the side.

Serve warm immediately.

Serve 10 people.
