Irish Cod Cobbler

Ingredients:

2 1/2 lbs. Fillets of cod, wash well and remove the skin
4 oz. Butter
1 liter Fresh milk
4 oz. Grated cheese
Scones Ingredients:
4 oz. All purpose flour
3 oz. Grated cheese
3 oz. Butter
1 tbsp. Baking powder
pinch Salt
2 Eggs
Procedure:

Preheat oven to 450F temperature.

Place the cod fillets in the bottom of a round oven dish.

Make a cheese sauce with 2 oz each of butter and flour, milk and 4 oz. grated cheese and pour over fish.

Making scone dough, rub 3 oz butter into 8 of flour with 1 tbsp. baking powder, and pinch of salt.

Add 3 oz grated cheese, preferably mature cheddar or a mixture of that and parmesan.

Drop 2 egg yolks in the mixture and add enough milk to produce a workable dough.

Rollout to the thickness of 1/2 inch and cut into small rounds with a scone cutter.

Dispose these rounds on top of the sauce, so that they just about cover the surface.

Glaze them with a little milk, sprinkle some more grated cheese over them.

Bake in a hot oven (450 F) for 25-30 minutes, until the scones are golden brown.

Serve 6 people.
