Roast Chicken


Roast Chicken (Jakarta Style)

3 lbs. Whole Roasting chicken
5 tsp. Jakarta Bali Barbeque Sauce
4 cloves Fresh garlic, crushed
1-1/2 tsp. Sea salt
3 tbsp. Lemon juice, freshly squeezed
1/2 tsp. Fresh ground black pepper
2 tsp. Fresh ground coriander
1/4 cup Water

Split roasting chicken down to the breast and open out flat

Put all ingredients together in bowl and stir well, then rub all over the chicken to marinate for 1 hour or longer leaving in the refrigerator.

Preheat oven to 375 degree for 20-30 minutes, and in a roasting pan put the chicken side up with 1/2 inch of water cooking in the middle rack of the oven.

Roast chicken for 30 minutes or until skin is crispy and brown. and turn and cook the other side for 20 to 25 minutes.

Serve hot immediately with Jakarta Bali Barbeque Sauce.

Serve 6-8 people

Simple tips:

This Chicken dish will really go very well with either steamed rice, or a good bowl of salad.
