Beef Brisket

Brisket of Beef in Stout Beer

Ingredients:

3 lbs. Brisket of beef, cut into 2 inches pieces
2 medium Onions, slice into 4 portions seperated into layers
3 tbsp. Virgin olive oil
1 pint or bottle Stout beer (Guinness)
2 tsp. All purpose flour
2 cloves Garlic, crushed
2 sprigs Fresh thyme
2 fresh Bay leaves
12 pieces  Pickled walnuts, cut into halves
dashes Salt and fresh ground Pepper to taste

Procedure:

Preheat oven on 300F temperature.

Meantime, heat a large casserole pot with the olive oil and start cooking the meat into few pieces at a time, seat them until they browned.

As they get browned, remove and set aside in a plate, then add the onions until they are golden brown on edges.

Turn to lower heat, and return the meat in to casserole , and stir the flour by wooden spoon.

Mix the stout, then add the thyme, bay leaves, garlic and pickled walnuts stir and season with salt and pepper and simmer.

Transfer into the oven and cook for at least 3 hours, covered and undisturbed, (the beer needs time to transform itself to the mixture for a delicious sauce flavor).

Serve 8 people.
