Long Beans

 

Shrimps with String Long Beans

Ingredients:

1 1/2 lbs. Medium Shrimps shelled and deveined
1 1/2 lbs Long beans, cut into 2 inches length
2 medium Onions, cut into thin slices
6 stalks Scallions, cut into thin slices
4 cloves Garlic, minced
4 tbsp Fish sauce
1 tbsp. Brown sugar
1 tsp. Black pepper
4 tbsp Canola cooking oil
Procedure:

In a large bowl, combine the shelled and deveined shrimps with half of fish sauce, half of sugar, and half of black pepper and marinate for 30 minutes.

Heat 2 tbps of cooking oil in a large skillet or wok.then add the remaining garlic and sauté for 15 seconds on high heat.

Add the marinated shrimp to the skillet and stir fry for 1 minute or until shrimp turn pink.and transfer as soon as they cooked to a plate and set aside.

In the same skillet, add and heat 2 tbps cooking oil put the onion and stir fry for 30 seconds.

Add the long beans and stir fry with the onion for 1 minute and mix the rest of fish sauce, 1/2 tsp sugar, 1/4 cup of water, and cook over medium heat for about 3-4 minutes.

Return the shrimp to the skillet and mix well with the long beans.

Transfer to a platter, sprinkle with some black pepper, and serve with steamed white rice.

Serve 6-8 people.

Simpls tips:

String long beans is a rare kind of vegetable, you can only buy them in Asian stores or super food stores who sell some Asian vegetables.

But you can substitute any long beans you can buy in most groceries.

If you prefer, you can substitute diced pork instead, just follow the same instruction.
