Chicken Breast

 

Homestyle Greek Chicken Breast

Ingredients:

6 medium pieces Boneless chicken, remove the skin
3 whole Lemon, freshly squeezed
6 medium Potatoes, peeled and sliced in french-fry style
1 cup Olive oil
1 1/2 cup Water
1 head Garlic, the cloves peeled but whole
(to make up 1 tsp.) Oregano, Salt, and Ground pepper to taste

Procedure:

Preheat the oven 350 F temperature.

Place chicken in a shallow baking pan, arrange potatoes around chicken pieces.

Spread the lemon juices and olive oil, and pour evenly over chicken breast.

Mix together whole peeled cloves of garlic, add water until potatoes are just about to covered, and add salt, pepper to taste.

Add the garlic around chicken and potatoes, and cover chicken and potatoes with generous amounts of oregano.

Bake in a preheated oven at the same temperature, until the meat are looking reddish brown.

Turn chicken, stir potatoes, and sprinkle on more oregano. If potatoes aren't at least half-covered with liquid, add water.

Return to cook in the oven for about 15-20 minutes.

Chicken is done when both sides a lightly browned and potatoes are soft by pinching with a fork.

Serve immediately with a crusty bread, or with pita bread.



Useful tips:

This Greek chicken dish is incredibly delicious, while you are cooking, the aroma, will make everyone in the house feeling hungry.

It's better to cook  this in an open pan, but the chicken stays moister if you cook with cover like with aluminum foil for the first half-hour or longer.

Either way, it really taste great!
