Spinach & Feta


Spinach Leaves and Feta Salad 


31/2 lbs.  Fresh spinach leaves
1 cup  Virgin Olive oil
4 tbsp. White wine vinegar
4 tbsp.  Lemon juice
1 tsp. Ground cinnamon
1 whole  Seedless cucumber, sliced
1 cup  Cherry tomatoes, cut into halves
1/3 tsp.  Dry mustard
1 lb.  Feta cheese, crumbled
pinches Salt and Freshly ground pepper to taste
4 stalks   Green onions, chopped


Remove the stems from spinach leaves, wash thoroughly and drain leaves.

Then cut into 1inch wide strips, and place in a salad bowl.

Mix together the oil, vinegar, lemon juice, cinnamon, mustard, salt, and pepper; pour half the dressing over the spinach and mix well. 

Slice thinly cucumbers and arrange in a ring across the top with the cherry tomatoes. 

Sprinkle with in the cheese and onions.

Pour remaining dressing over the salad.
Serve 6 people.
