Diced Pork

 

Diced Pork Cubes in Black Bean Sauce

Ingredients:

1 lb.  Lean Pork meat, cut into 1/2 inch cubes
1 medium size Onion, chopped roughly
2 medium size  Tomatoes, chopped roughly
2 medium cloves Garlic, minced
1 small can  Black Bean Sauce, use 3 tbsp. (available at Asian Stores)
1 whole Fresh Tofu, sliced into cubes and deep fry 
1/2 cup  Canola oil, for frying the tofu cubes
2 tsp.  Fish Sauce (optional)
2 tbsp.  Olive oil
some  Ground pepper to taste
1 tsp.  Brown Sugar

Procedure:

In medium skillet or wok in high heat, pour the olive oil and fry the pork cubes until slightly brown, for 5-6 minutes then set aside.

In the same skillet with the remaining oil sauté garlic, onion, and tomatoes, stirring often until they all cook softened.

Combine the black beans, stir  for 2 minutes and add the pork cubes, fish sauce if needed and brown sugar, stir to incorporate and coat the sauce.

Simmer for 5 minutes then cover to cook for 4-5 minute in low heat.

In another skillet pour the canola oil and deep fry the tofu cubes, (make sure not to over load the skillet to give enough room to deep fry the tofu).

As soon as they cook, add and combine them into the cooking mixture stir evenly to coat the sauce and cook for 3 minutes.

Serve warm with steamed white rice or Chinese fried rice.

Serve 4 people.

 

Cooking time: 25-30 minutes

Preparation time: 15 minutes

 

Simple tips:

For perfect rice cooking, I suggest to use rice cooker as they can never go wrong.
